Q I love the occasional little treat for afternoon tea with my friends, but I want it to be healthy. Can you recommend something that’s sweet?

A Have a go at these little treats. They also freeze really well so you can pull
a couple out of the freezer when friends drop in.peaches and cream cup cakes
makes 24
200g ground almonds;
1 cup sweetener (use Xylitol
or Splenda);
80g skim milk powder;
100g desiccated coconut;
10 egg whites at room temperature;
zest from 1 lemon;
2 tsp coconut essence;
150g dried peaches, chopped;
sliced fresh peaches to garnish (optional);
100g low fat smooth ricotta to serve (optional).
Combine almonds, sweetener, skim milk powder and coconut in a mixing bowl. Beat the egg whites until soft peaks, then fold through with the lemon juice and zest, coconut essence and peaches.
Spoon into cup cake tins or small muffin tins and bake in a moderate oven 180C for around 20 to 25 minutes. Serve alone topped with low-fat ricotta and sliced peaches.
